Crust:
90g butter
25ml castor sugar
25ml oil
1 egg
375ml all purpose flour
8ml baking powder
1 ml salt
Oven 180 C
Beat butter and sugar together until light and creamy, add oil and egg and mix well. Add the sifted flour, baking powder and salt and mix till dough. Press the dough in a springform pan against the sides and the bottom. Pre-bake for 10 minutes. Let it cool down.
Filling
4 eggs
250ml sugar
60ml lemon juice
3 x 250g smooth creamed cottage cheese
250ml cream
125ml all purpose flour
fresh berries for garnish
Beat the eggs and sugar until light and creamy. Add the lemon juice, cottage cheese, cream and flour. Mix well.
Pour into cooled baked crust.
Bake for 10minutes at 180C and then for 1 hour at 120C. Turn off the oven and let the cake cool down inside the oven.
